Gluten-free Market Continues Expansion

The gluten-free product market is missing something besides gluten. Although 2008 sales of gluten-free products topped $1.5 billion dollars in the U.S., there is still room to grow.
A gluten-free diet is often recommended in the treatment of celiac disease, and is also helpful for those with wheat allergies. What makes it tricky is that many foods contain gluten as an additive, and it may or may not be listed in the ingredients.
Gluten-free products used to be considered specialty items, but according to this article in Food Business News, 73% are now offered in supermarkets and more than 1,000 new gluten-free products were introduced in 2008.
While there are many companies specializing in gluten-free foods, a challenge lies in development of gluten-free products that offer the same nutritional value as the regular foods for which they are substituted. There are also many items that are lacking in the market, including a wider variety of gluten-free bread, hamburger buns and gourmet food products.
